Restaurants Rush to Camp Bowie by June Naylor

Tim Love revamped his year-old Euro bistro a few months back, turning it into a "modern American steakhouse." There are still options for those wanting to sip stylish cocktails and graze on a few light edibles - the sushi, sashimi and ceviche-like tiradito choices are lovely -- but the diner who wants a Shiner and a burger, or a bottle of bold red wine with a dynamite porterhouse or veal chop, can be accommodated, too. At lunch, you can opt for three courses for $20.07, with choices such as wild ivory salmon with chile paste and tropical fruit, followed by a sandwich of braised lamb with goat cheese or a fried chicken quarter, with crème brulee as the finale. Perhaps the best deal is the Wine Wednesday offering, when you can enjoy a menu of four appetizer nibbles with samples of the week's four wine picks for $15. Perch at the bar to watch comings and goings, tuck into a table or enjoy the patio with its waterfalls and live music. Dinner is served until midnight.
Good to know: Live jazz on Thursday and a DJ on Friday and Saturday nights.

Dove Connection by Tim Madigan

EASY DOVE IT - Tim Love's main goal in his dove promotion is to inspire more hunters to eat what they shoot. To inspire cooks, Love is offering "easy dove it" suggestions for cooking dove on your own:
* For Dove Breasts: Soak dove breasts in a bottled Italian vinaigrette, thread four breasts to a skewer and grill 2 minutes a side. Serve with salsa or marinara sauce.
* For Dove Nuggets: Soak dove breasts in buttermilk for at least 1 hour. Toss meat in 3 cups flour mixed with 2 tablespoons chile power, 1 teaspoon salt and 1 teaspoon pepper. Fry in peanut oil in an iron skillet for about 2 minutes a side on medium heat. Serve with barbecue sauce or ranch dressing.
* For Dove Corn Dogs: Skewer dove breasts three to a skewer. Make your favorite corn-dog batter. Roll dove in cornstarch and then dip into batter. Fry in peanut oil until dark-golden brown, and serve with ketchup and mustard.

Tim Love's
Dove Tacos with Ranchero Sauce
and Pico de Gallo

This is a great recipe for when you finish hunting in the evening. All you need is a couple of iron skillets a good fire and a cooler full of margaritas.

16 Cleaned Dove Breasts
¼ Cup Chopped Raw Bacon
1 Cup Ranchero Sauce
½ Cup Red Onion Diced
1 Avocado
2 Whole Fresh Limes
1 Bunch Cilantro
2 Tablespoon Oil
8 Fresh White Corn Tortillas
1 Cup Oxacan Cheese
Salt and Pepper to taste
1 Cup Pico de Gallo

In a hot sauté pan add 1T oil and bacon.  Season the dove with salt and pepper and sear quickly.  It does not take long to cook the small breasts.  Add ½ cup ranchero sauce and stir.  This whole process should take approx. five minutes.  Turn off heat.  On a flat grill or iron skillet place the tortillas 10 seconds on each side on the grill.  Slice the dove breasts on the bias and return to the sauce.  Spoon sliced dove on to the tortillas and serve immediately with sliced avocado, limes, chopped onions, cheese, and remainder of the ranchero sauce on the side.

Artist of the Month - Pauline Reese

Pauline Reese has done a lot in just a short period of time. Aside from working practically every honky tonk and dancehall in the state, her vocal skills have become enormously in demand to kick off rodeos and sporting events across Texas with her crowd-pleasing rendition of “The Star Spangled Banner.” Pauline has been a very busy girl off the stage, as well, working Texas & Oklahoma radio, modeling at fashion shows and she is now sponsored by Michelob Ultra (Anheuser-Busch), Elixir Strings, Bad Company Rodeo and Martin Audiology, which also keeps her moving at a fast pace.
Pauline’s family history is steeped in rodeo and music, with country, bluegrass, Spanish and big band thriving at their small East Texas ranch. In addition, her mother, a musical director for the local church, brought that influence into the home. At age 14, Pauline and her family moved to the Austin, Texas area. At that point, she was introduced to many other styles of music, but country remained her passion. By the age of 15 she was singing backup in a local band, and by 18 she was fronting her own.
Now, at 27 years of age, Pauline has evolved as an artist and a songwriter. Known as one of the hardest-working artists in the state, she has shared bills with Willie Nelson, Gary P. Nunn, Freddy Powers, Kevin Fowler, Mark Chestnut, Johnny Rodriguez, Billy Joe Shaver, Merle Haggard, Johnny Bush, Cross Canadian Ragweed, Cory Morrow, Pat Green, Gene Watson, Jack Ingram, Sonny Throckmorton, Roger Creager- the list goes on and on. In addition, she has garnered a nomination for the “Western Swing Female Vocalist of the Year” award by the Academy of Western Artists, and has completed her first tour of Europe in the summer of 2003. Pauline received a lot of attention on her second CD release “Trail to Monterrey” and her third CD project “The Good, the Bad and the Ugly” is now out getting rave reviews and quickly climbing the Texas & Oklahoma charts. On this project she has written or co-written eight of the fourteen tracks, including a duet with Willie Nelson. Her first single “One Less Honky Tonk” went to #15 on the Texas / Oklahoma chart and is now working the song ”Cowboy Way” Which is currently in the top 30 on the Texas Chart. With her full six-piece band, powerful vocal style, and an undying appreciation of true-to-the-roots country music, Pauline Reese is a natural fit for audiences across the state and beyond- anywhere good country music is treasured.
