Guajillo
Chile Marinated Shrimp
Ingredients
1 lb U12 shrimp
1 c olive oil
2 limes, juiced
1 T ground pasilla chile
3 whole cloves roasted garlic, diced
˝ c red onion, diced
1 red bell pepper roasted and julienne
1 c Hussong’s 100% agave tequila
6 eggs
1 lb butter
1 c red wine vinegar
1 T diced shallots
Directions
Peel and de-vein shrimp. In a mixing bowl, place shrimp,
oil, lime juice, pasilla chile, garlic, and onion and mix
well. Place in refrigerator.
In a sauté pan, add red wine vinegar, shallots, red bell
pepper, and tequila. Reduce to an essence.
In a food processor, place the essence along with yolks from
6 eggs and blend. Set mixture aside.
Melt butter and bring to a boil. Add melted butter to
processor, one ladle at a time. Sauce will emulsify. Add
salt and pepper to taste.
Grill shrimp on a hot grill with salt and pepper. Drizzle
sauce on top and serve.

Artist of the Month - Billy Joe Shaver
Playing Live at the White Elephant on 6/16 @ 9pm.

Our Artist of the Month for June is Texas native and the
original country music Outlaw legend, Billy Joe Shaver.
First off, Billy Joe Shaver at the White Elephant Saloon is
going to be a treat for any music fan. If you are
wanting to see a great performance by a legendary artist at
a legendary venue, this is it!
Words cannot express how important Billy Joe Shaver was in
establishing the Outlaw philosophy into Country Music.
Waylon Jennings 1973 album titled "Honkytonk Heroes"
featured 9 out of 10 tracks written by Billy Joe Shaver.
This album, many believe, was an initial factor in what led
Waylon Jennings & Willie Nelson to return to Texas and start
the Outlaw Movement alongside other Texas Singer/Songwriters
like Billy Joe, Rusty Wier, and Ray Wylie Hubbard.
Other artists, including Elvis Presley and Kris
Kristofferson, began to record Shaver's music. This led to
his own record deal.
Unfortunately for Shaver, the first few recording companies
he signed with soon folded. He was never able to gain
widespread recognition as a singer, although he never
stopped recording his own music.
After losing his wife, Brenda, and his mother to cancer in
1999, Shaver lost his son and longtime guitarist Eddy, who
died at age 38 of a heroin overdose on December 31, 2000.
Shaver nearly died himself the following year when he had a
heart attack on stage during an Independence Day show at
Gruene Hall in New Braunfels, Texas. After successful heart
surgery, Billy Joe came back to release a new album entited
"Freedom's Child" in 2002.
Billy Joe Shaver is known for his hit "Live Forever"
performed by The Highwaymen. He also wrote numerous songs
for artists such as Patty Loveless and Willie Nelson. For
his efforts, the Americana Music Convention awarded him
their Lifetime Achievement Award in Songwriting.
In 1999, Shaver was invited to perform at the Grand Ole Opry.
In November of 2005, Billy Joe Shaver performed on the CMT
Outlaws 2005. In 2006, Shaver was inducted in the Texas
Country Music Hall of Fame. He recently served as spiritual
advisor to Texas independent gubernatorial candidate Kinky
Friedman. He currently lives in Waco, Texas.
Shaver sings the themes to the Adult Swim Television show,
Squidbillies.
In 1996, Shaver took a part in the movie The Apostle,
playing opposite Robert Duvall. He had additional speaking
roles in the Duvall film Secondhand Lions (2003) and in The
Wendell Baker Story (2005).
In 2004, a documentary of his life, A Portrait of Billy Joe
was released. The documentary was directed by Luciana
Pedraza, the wife of Robert Duvall.
