As the foremost pioneer of urban Western cuisine, Love wears a cowboy hat in place of a toque, appoints nachos with kangaroo carpaccio and marries foie gras with chiles. A true Texan, the foundation of Love’s cuisine is, naturally, steak and wild game, and includes huge cuts of Texas steer, buffalo, antelope, red deer and wild boar, supplemented by lingonberries from Sweden, Manchego cheese from Spain, and Quandong sauce from Australia for global flair.

Love began his career in Knoxville, Tennessee, working in a kitchen while completing a Bachelor’s Degree from the University of Tennessee. This self-taught chef worked his way to the helm of Uptown Bistro in Frisco, Colorado where he received the “Taste of Breckenridge Grand Award” three years running and the “Taste of the Mountains Award” on numerous occasions.

has earned critical acclaim since it opened in 2000. In April 2007, Tim opened his newest Fort Worth restaurant, a classic burger joint called The Love Shack. The Love Shack is a casual outdoor spot serving fresh burgers, sausages, hand-cut fries and onion rings, root beer on tap, and a selection of beer and wine. The Love Shack is adjacent to The White Elephant Saloon, another Love property, in the historic Stockyards district.

In 2003, Love celebrated the late James Beard’s 100th birthday with his first annual trail drive. Traveling with horses and camera crew from Fort Worth to New York City, and then riding up on horseback to farmers’ markets along the trail to select local ingredients, Love’s Trail Drive culminated with a gala dinner at the James Beard House that featured all the products he picked up on the trip north. More than 30 million people followed Love’s trail drive as it was featured in various print publications and NBC’s “The Today Show.”

In 2004, Love embarked on his second annual trail drive. This time, the trail moved to the West in honor of Love’s participation in the American Express Celebrity Chef Tour, an annual charity event featuring celebrated chefs. This unique philanthropic dining adventure was captured by the Food Network in a documentary, “Cowboys on the Trail,” and was nominated for a James Beard Award.

In 2003, Love partnered with Trefethen Vineyards to create The Lonesome Dove Western Bistro Chardonnay, Cabernet Sauvignon, and Viognier. Love released his second line of cookware this year, The Tim Love Collection which debuted on the Home Shopping Network in September 2007.

In May 2007, Love appeared on the Food Network’s “Iron Chef America” in a victorious “Chile” battle against Iron Chef Masaharu Morimoto. Love was also featured on the Food Network’s “Challenge: Hawaiian Luau Beach BBQ.”

In July 2007, Love participated in the James Beard Foundation’s annual “Chefs & Champagne” tasting event at the Wolffer Estate Vineyard in Sagaponack, New York. Love appeared as a guest chef on Paula Deen’s, “Paula’s Party in October 2007 and in February 2008, Love will be a guest chef at “Rachael Ray’s Burger Bash” which will take place at the 2008 Food Network South Beach Wine & Food Festival. Love capped off a busy 2007 by being named one of five “Lonestar Leaders” by KXAS NBC Dallas. Love was in the company of other fine Texans like Senator Kay Bailey Hutchinson, Jason Witten of the Dallas Cowboys, Dallas Mavericks Coach Avery Johnson, and first daughter Jenna Bush. The honor recognized the work Love has done on behalf of Spoons Across America, which provides food and nutrition education to children, families, and teachers through school- and community-based programs.

In addition to Love’s recent television appearances, he has been featured extensively in national publications such as Bon Appetit, Food & Wine, and The Wall Street Journal and regularly appears in the Fort Worth Star-Telegram, The Dallas Morning News, and D magazine.

When he’s not busy working in the kitchen or developing his line of cooking products, Love can be found spending time with his wife Emilie and their three children.
